Spicy Apple Pancakes
Ingredients
2 qt. apple slices (1/4-3/8″ thick), peeled
1/2 C. pancake syrup
2 Tbsp. butter
1 1/2 C. biscuit mix
1 C. milk
2 eggs
1 Tbsp. melted or liquid shortening
1/2 tsp. cinnamon
1/4 tsp. nutmeg
Cooking Instructions
Combine apples in skillet with syrup and butter. Cook until tender but firm (25 minutes). Meanwhile combine rest of ingredients and mix until smooth. Remove apples from skillet with slotted spoon and add to batter. Fold gently until apples covered. Lift battered covered apples onto lightly greased, hot griddle. Grill until edges cooked. Turn pancakes once. Serve with remaining syrup in which apples were cooled.
