Microwave Vegetable Medley
Ingredients
2 C. broccoli florets
1 C. cauliflower florets
1 C. sliced zucchini
1 C. crookedneck squash
3 lg. sliced mushrooms
1 red pepper, cut into strips
1 green pepper, cut into strips
1 stick margarine
Garlic powder
Black pepper
Cooking Instructions
On a large microwave-safe platter arrange broccoli around outside of platter. Make a ring of cauliflower inside the broccoli. Arrange remaining vegetables in center, alternating for color. Melt margarine about 60 seconds and add garlic powder and pepper. Pour seasoned margarine over the vegetables. Cover with plastic wrap and cook on high, 6 to 7 minutes or until vegetables are tender.
