Cream Of Mushroom Soup1
Ingredients
5 C. Mushrooms
1 1/2 C. chicken broth (or) Vegetable Broth
1/2 C. chopped onion
3 Tbsp. Butter
3 Tbsp. Rice flour
1/4 Teas. Salt (or) to taste
1/4 Teas. Freshly ground black pepper (or) to taste
1 C. Dairy Free Milk
1 Tbsp. Sherry Wine
Cooking Instructions
1: In a large pan, cook mushrooms, broth and thyme until mushrooms are tender.
2: Blend mixture in blender, (or) emerging blender, leaving some chunks of veggies in it. Set it to the side.
3: In a saucepan, melt the butter, and whisk the flour until smooth.
4: Add salt and pepper, and milk, heat until boiling.
5: Pour mixture into mushroom puree. Stirring consistently, bring to a boil and cook until thickened.
6: Adjust seasoning to taste, and add sherry.
