Armenian Lentil Soup
Ingredients
1 cup onion,chopped
1/2 cup carrots,sliced
1/2 cup celery,sliced
3 cup eggplant,peeled, cubed
1 cup green pepper,diced
3 cloves garlic,minced
6 cup chicken stock

Cooking Instructions
Saute veggies in olive oil. Add the rest, except parsley and mint. Simmer until lentils are tender, Add the rest.
Adjust seasonings to your taste.
