Zucchini, Quick & Easy
Ingredients
1 Tbsp. butter or margarine
1 onion, cut in chunks
1 lb. ground beef
4 C. sliced zucchini
1 tomato, peeled & cut in chunks
1 (8 oz.) can tomato sauce
2 tsp. Italian seasoning or
1/2 tsp. each: oregano, thyme, marjoram & basil
1/2 tsp. salt
1/4 tsp. pepper
Parmesan cheese
Cooking Instructions
Saute onion in butter. Add beef and cook until crumbly. Stir in remaining ingredients. Simmer, covered, until tender. Uncover, turn up heat and cook until liquid is absorbed. Sprinkle with Parmesan cheese. May be served over rice. 4 servings.
