Ingredients

4 C. zucchini, grated
1 lg. onion, chopped
1 1/2 lb. hamburger
1/2 tsp. salt
1/8 tsp. pepper
1 (6 oz.) pkg. stuffing mix for chicken
1 C. carrots, grated
1 can cream of chicken soup
1 C. sour cream

Cooking Instructions

Grease large casserole, cook zucchini and onion in small amount of water 2 to 3 minutes; drain. Brown meat with salt and pepper. Mix stuffing according to directions. Spread 1/2 of meat in bottom of casserole; then 1/2 of stuffing. Combine carrots, soup and sour cream. Fold in zucchini and onion. Pour mixture over stuffing add remaining meat and top with remaining stuffing. Bake 40 to 50 minutes at 350º.
