Winter Squash Apple Brunch Cake
Ingredients
2-1/4 C. flour
2 tsp. baking powder
1/2 tsp. soda
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/2 C. butter
1-1/3 C. sugar
1/2 tsp. vanilla
3 eggs
3/4 C. cooked mashed squash (butter or acorn)
1/2 C. buttermilk
3-4 granny smith apples peeled and chopped (slice one C. and set aside)
1 C. raisins
1 C. walnuts
1/4 C. sugar
Cooking Instructions
Cream butter, add sugar spices and eggs. Beat until Fluffy. Stir the squash and buttermilk together. Stir flour and baking powder and soda together. Add alternatively with the squash mixture. Stir in chopped apples, raisins and walnuts. Pour into greased and floured springform pan. Toss 1 C. remaining apples with cinnamon and sugar. Arrange on top of the batter. Sprinkle raisins on top. Bake at 350 for 1 to 1-1/4 hours. Cool. Drizzle with powdered sugar icing. (Freezes well)
