Venison Deer Roast
Ingredients
4 to 5 lbs. deer roast
1 C. wine vinegar
1 C. cold water
1 onion, sliced
1 bay leaf
2 whole cloves
1 glove of garlic
1 tsp. salt
1 tsp. pepper
3/4 C. flour
1/2 C. bacon drippings
3 strips salt pork 1/4 inch thick
1 green pepper
Cooking Instructions
Marinate in vinegar, water and spices for 3 days. Turn each day. Remove and dry. Flour and brown in bacon drippings. Put in shallow baking pan and cover with salt pork and green peppers. Bake at 350 degrees for 2 1/2 hours basting occasionally.
