Vegetarian Stroganoff 2
Ingredients
1 lb. whole wheat noodles
1/4 C. margarine
2 bell peppers, diced
5 tomatoes, cut into wedges
2 zucchini, diced
1 eggplant, diced
1 C. celery, diced
1 C. chopped string beans
1/4 tsp. black pepper
1/2 tsp. cumin powder
1 Tbsp. chopped onions
1 tsp. chili powder
1 Tbsp. soy sauce
2 Tbsp. chopped parsley
1 C. veggie patty
3 C. sour cream
1/2 C. nutritional yeast
Cooking Instructions
Boil the noodles. In the meantime, saute the next 7 ingredients. When vegetables are translucent, add the next 7 ingredients and saute a few minutes longer. As soon as the eggplant is cooked, add the last 2 ingredients as well as noodles that have been boiled and drained. Serves 10.
