Vegetarian Patties
Ingredients
1/4 C. corn oil margarine
1 C. minced onion
1 C. minced celery
1 C. coarsely shredded carrot
1 C. finely chopped walnuts
1 C. fine dry bread crumbs
1 tsp. salt
1 C. mayonnaise
1 egg, slightly beaten
Cooking Instructions
In skillet over medium heat, melt margarine. Saute onion 5 minutes. Add next 5 ingredients and saute 2 minutes. Remove from heat. Stir in mayonnaise and egg. Cool. Shape into patties. In skillet over medium heat, melt remaining margarine. Fry patties, turning over 6 minutes. Makes approximately 10 patties.
