Turnip, Mustard Or Dandelion Greens
Ingredients
4 slices bacon, diced
2 Tbsp. finely chopped onion
2 Tbsp. flour
2 Tbsp. water
1/4 C. cider vinegar
2 Tbsp. sugar
1/4 tsp. salt
1/8 tsp. pepper
1 egg, lightly beaten
1 C. light cream or half and half
3 C. chopped cooked greens (turnip, mustard, or dandelion)
Cooking Instructions
Cook the bacon bits until crisp; remove and reserve. In the bacon drippings, Saute onion until golden. Sprinkle with flour and cook for 2 minutes. Stir in water and vinegar. Add sugar, salt and pepper. Combine egg with cream or half and half and add. Heat, stirring, until thick. Do not boil. Pour sauce over the greens, toss and sprinkle with reserved bacon bits. Serves 8.
