Turkey Gumbo
Ingredients
2 Tbsp. margarine
1/2 pound okra, fresh or frozen, cut into 1-inch lengths
2 C. celery, chopped
1 medium onion, chopped
1 small sweet green pepper, chopped
2 garlic cloves, minced
8-oz. can tomato paste
4 ripe tomatoes, peeled, or 16-oz. can peeled tomatoes
2 C. water
2 C. cooked turkey, chopped
3/4 tsp. gumbo file powder
cooked rice
Cooking Instructions
Melt margarine in a large skillet. Add okra. Saute until okra loses its shiny appearance, about 5 minutes. Remove okra pieces to a bowl. Add celery, onion, green pepper and garlic to skillet. Cook over medium heat until onion is transparent. Add tomato paste, tomatoes, water, okra mixture and turkey. Cook over low heat 10 minutes, or until turkey is hot.
