Turkey Chowder
Ingredients
1/2 C. onion, chopped
1 C. celery, sliced
2 Tbsp. margarine
2 Tbsp. flour
1/2 tsp. salt
1/4 tsp. black pepper, ground
1 tsp. dried thyme
5 C. turkey or chicken broth
2 potatoes, peeled and cubed
1 C. carrots, chopped
1 C. zucchini, sliced
1/2 C. unsweetened apple juice
3 C. cooked turkey, chopped
Cooking Instructions
Saute onion and celery in margarine. Add flour, salt, pepper and thyme. Gradually add broth. Add potatoes and carrots. Cover and simmer 15 minutes, or until vegetables are tender. Add zucchini, apple juice and turkey. Continue cooking over low heat 10 minutes.
