Tomato And Dill Soup
Ingredients
2 onions, minced
2 cloves garlic, chopped
1 tsp. olive oil
4 C.(s) chopped plum tomatoes
1 C.(s) diced sweet red peppers
1/4 C.(s) diced celery
2 Tbsp. chopped green chilies
2 C.(s) stock
2 tsp. fresh dill, chopped
2 Tbsp. chopped fresh cilantro
1/2 tsp. cayenne
1/4 tsp. cumin
Cooking Instructions
Combine all ingredients except dill, cilantro, cumin, cayenne and salt. Bring to a boil and simmer for 25 minutes. Let cool slightly, then puree. Stir in remaining ingredients with some salt and pepper. Serve warmed or chilled.
