Tofu Loaf
Ingredients
1 Tbsp. oil
2 each garlic cloves, diced
1 each onion, diced
1 each carrot, diced
1 each red bell pepper, diced
1 each celery stick, diced
2 Tbsp. tamari
2 pound tofu, mashed
4 slice wholewheat bread
1 Tbsp. oil
1 Tbsp. tamari
1/2 tsp. garlic powder
1 C.(s) nutritional yeast
1/2 C.(s) tahini
1/2 tsp. basil
1/2 tsp. oregano
1/2 tsp. turmeric
Cooking Instructions
Heat oil in a skillet, add garlic, onion, pepper, carrot and celery. Season with 1 Tbls. tamari. Cook till vegetables are tender. Remove from heat and put in a large mixing bowl. Add mashed tofu. Cut bread into crouton sized pieces and quick fry in remaining oil with rest of tamari, garlic powder and 5 Tbls. nutritional yeast. Add to tofu mixture. Add rest of the ingredients. Mix well. Place in a well oiled casserole dish and press down very well. Bake at 350f for 35 minutes. Allow to cool slightly, then turn out on a plate. Slice and serve. Excellent cold too.
