Tarragon Turkey Patty
Ingredients
1 tsp. extra virgin olive oil
1/4 pound ground turkey (97 percent fat free)
2 Tbsp. chopped onion
2 Tbsp. dry breadcrumbs
1 tsp. dried parsley
1/4 tsp. thyme
1/4 tsp. tarragon
fresh ground pepper, to taste
1 egg white
1 Tbsp. flour
Cooking Instructions
Mix together all ingredients, except oil and flour, in a small bowl. Form turkey mixture into a 3/4-inch thick patty. Heat oil in a small skillet over medium heat. Dredge turkey patty in flour and place into skillet. Cook for about 5 minutes on each side, or until juices run clear when pricked with a fork. Do not overcook.
