Tabbouleh Salad
Ingredients
2 C. ;water, hot
1 C. bulgur wheat; uncooked
1 C. parsley; chopped
1/2 C. mint; chopped
1/2 C. onion; chopped
1/3 C. lemon juice
2 Tbsp. olive oil
1/2 tsp. salt
1/2 tsp. pepper
2 medium tomatoes; finely chopped
Lettuce leaves
Cooking Instructions
Pour hot water over bulgur; let stand 30 minutes. Drain well, and press between layers of paper towels. Combine bulgur and next 7 ingredients. Cover and chill 8 hrs. Stir in tomatoes. Serve on lettuce leaves.
