Sugar Free Chocolate Muffins
Ingredients
2 C. flour, sifted
1 tsp. baking soda
1-1/2 tsp. baking powder
6 Tbsp. cocoa
1/4 C. canola oil
3/4 C. skim milk
1/2 C. sugar free jam, barley malt sugar, or apple juice concentrate, thawed
2 tsp. vanilla extract
2 egg whites
Cooking Instructions
Combine all dry ingredients and mix well. In another bowl, mix all wet ingredients well. Pour liquids into solids and mix well. Pour into pan coated muffin tins. Bake in preheated oven at 400 degrees F. for 15 minutes, or until top springs back when pressed.
