Sugar And Spice Apple Cakes
Ingredients
2 C. all purpose flour
1 C. whole wheat flour
1 1/2 C. sugar; divided
4 tsp. baking powder
1 tsp. salt
1 tsp. nutmeg
2/3 C. shortening
1/2 C. milk
2 eggs; beaten
2 C. apples; finely chopped
1/2 C. butter or margarine; melted
1 1/2 tsp. cinnamon
Cooking Instructions
Combine flours, 1 C. sugar, baking powder, salt and nutmeg. Cut in shortening until mixture resembles fine crumbs. Combine milk and eggs; gradually add to dry ingredients. Fold in apples. Fill greased muffins tins 2/3 full with batter. Bake at 350 for 20 to 25 minutes. Combine remaining 1/2 C. sugar and cinnamon. While cakes are warm, dip tops in melted butter, then in cinnamon sugar. Best when served warm.
