Stuffed Pork Chops
Ingredients
2 Tbsp. oil
2 cloves garlic
1 Tbsp. basil chopped
1 small onion chopped fine
3 stalks celery chopped fine
3 Tbsp. parsley chopped
1 small apple peeled and sliced
2 Tbsp. red curry base
2 ounces garlic chili pepper sauce
1 Tbsp. brown sugar
3 C. corn bread cubes (for stuffing)
2 C. chicken stock
4 pork chop double cut butterflies
apple ginger sauce
Cooking Instructions
Preheat oven to 350. In large pan, heat oil. Add garlic, basil, parsley, onions, scallions and celery and Saute until soft. Add apple and red curry base. In a large bowl, combine Saute mixture, garlic chili pepper sauce, brown sugar, corn bread cubes and chicken stock. Mix together well. Open pork chops and fill with stuffing. Place in a baking dish. Arrange any leftover stuffing around chops. Bake 40-45 minutes or until pork is no longer pink. Serve with Apple Ginger Sauce.
