Strawberry Soup
Ingredients
3 C. sliced strawberries
1/3 C. grape juice
1/2 C. orange juice
1 Tbsp. cornstarch
2 Tbsp. honey
1/4 tsp. cinnamon
1 tsp. vanilla extract
1 C. plain, low fat yogurt
Cooking Instructions
In a food processor, puree strawberries. Add grape juice, orange juices, and cornstarch. Turn into a medium size saucepan. Stir in honey and cinnamon. Cook over medium heat, stirring constantly, until thickened, 5 to 10 minutes. Remove from heat; mix in vanilla. Cool, then whisk in yogurt just until blended. Chill before serving.
