Strawberry Shortcake
Ingredients
2 C. all purpose flour
2 Tbsp. sugar
4 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cream of tartar
1/2 C. margarine, softened
1 egg, beaten
2/3 C. skim milk
2 pints strawberries, sliced
light whipped topping (optional)
Cooking Instructions
In a bowl, combine flour, sugar, baking powder, salt and, cream of tartar. Cut in margarine until mixture forms coarse crumbs. Add the egg and milk; mix well. Spread into an 8-inch square baking pan coated with nonstick cooking spray. Bake at 375 degrees F. for 20 to 25 minutes. Cut into squares. Top with strawberries and whipped cream, as desired.
