Stewed Chicken
Ingredients
4 chicken breast halves, boneless
16 oz. canned Italian stewed tomatoes, cut in bite-sized pieces
4 oz. canned sliced mushrooms, salt free
1 medium onion, sliced in rings
2 tsp. Italian seasoning
2 tsp. garlic, chopped
salt, to taste
pepper, to taste
mozzarella cheese, fat free, shredded
Cooking Instructions
Place chicken in baking dish. Top with tomatoes and their juice, mushrooms, onions and seasonings. Cover tightly with foil. Bake at 350 degrees F. for 1 hour, or until chicken is done. Remove from oven; sprinkle with mozzarella. Cover with foil until cheese melts.
