Sponge Cake Diabetic
Ingredients
7 eggs; separated
1 1/2 C. sifted flour
3/4 C. pineapple juice
Pineapple juice
1 tsp. vanilla
1 tsp. pineapple flavor
1 tsp. orange flavoring
Liquid sweetener to equal 1 C. sugar
3/4 tsp. salt
1 1/2 tsp. baking powder
Cooking Instructions
Mix together, egg yolks, flour, pineapple juice and flavorings, artificial sweetener and salt. Beat until stiff but not dry, the egg whites and baking powder. Gently but firmly blend the yolk mixture into the beaten egg whites mixture. Bake in a 10 inch tube pan at 350 for about 55 minutes invert and cool in pan.
