Spanish Liver
Ingredients
2 pounds beef or calves liver
4 slices bacon cut in half
1/2 C. chopped carrot
1/2 C. chopped celery
1 small onion sliced
1 can stewed tomatoes-16 oz.
1 tsp. salt
1/8 tsp. freshly ground black pepper or more to taste
1 small bay leaf
Cooking Instructions
Place liver in crock pot. Arrange bacon on top. Mix the remaining ingredients and pour over liver. Cover and cook on low 6 to 8 hours. Remove bay leaf.
