Smothered Okra
Ingredients
2 C. coarsely chopped green peppers
salt to taste
2 Tbsp. vegetable oil or peanut oil
1 clove garlic, finely minced
1/2 C. coarsely chopped onion
3 C. okra, cut into 1/2″ lengths
pepper to taste
Cooking Instructions
Place the green peppers in a saucepan and add water to cover. Add salt and bring to a boil. Cook for 1 minute and drain. Heat oil in a skillet and add garlic and onion. When onion is wilted, add okra. Sprinkle with salt and pepper. Cook, stirring, for 10 minutes and add the drained green peppers. Cover and cook briefly. The vegetables should be tender, but they should retain a somewhat crisp texture. Serves 6.
