Sloppy Turkey Spuds
Ingredients
4 (10 oz. each) potatoes
12 oz. ground turkey
1 medium onion; chopped
1 medium green bell pepper, chopped
1 C. sliced mushrooms
1 jar or can marinara sauce or other vegetarian spaghetti sauce (14 or 15 oz.)
salt and pepper, to taste
1/4 C. chopped parsley
1/4 C. grated parmesan cheese
Cooking Instructions
Pierce potatoes with tines of fork; microwave on high for 20 to 22 minutes until potatoes are fork-tender. Meanwhile, in large nonstick skillet over medium heat Saute turkey until no longer pink, for about 6 minutes. Add onion, bell pepper and mushrooms; Saute, stirring, for 3 minutes. Stir in marinara sauce; bring to boil, reduce heat, cover and simmer for 10 minutes. Season with salt and pepper; stir in parsley. Place potatoes on 4 plates; split and fluff. Top potatoes with turkey mixture and cheese, dividing equally.
