Sassy Bean And Bulgur
Ingredients
1 1/2 Tbsp. sunflower oil
3 ounce kidney beans; cooked
3 ounce bulgur; cooked
3 ounce brown rice; cooked
3 ounce mushrooms; sliced
3 ounce carrots; sliced
1 ounce scallions; chopped
1 ounce tomato sauce
1/2 tsp. oregano
1/2 tsp. salt
3 ounce spinach leaves
Cooking Instructions
Preheat oven to 350 degrees. Lightly grease 4 x 8 baking pan with sunflower oil. Combine all ingredients together except spinach leaves. Mix well. Transfer to a baking pan and place in oven for 20 minutes. Serve on bed of spinach leaves.
