Rosemary Chicken
Ingredients
1/4 C. flour
1 tsp. salt
1/4 tsp. pepper
1 pound chicken breasts, boneless, skinless, cut into pieces
2 Tbsp. vegetable oil
1/2 C. water
1/2 C. white wine
1/4 C. baby pearl onions, or chopped onion
2 Tbsp. fresh rosemary, or 1 Tbsp. dried rosemary
Cooking Instructions
Combine the flour, salt, and pepper; place mixture in a paper bag. Shake chicken pieces in the bag to coat. Heat oil in a skillet; brown chicken pieces. When evenly browned, add water, wine, onion, and rosemary (alcohol in the wine will evaporate, leaving only the flavor.) Simmer for 30 minutes. Uncover and cook a few minutes more.
