Rio Grande Mud Cake
Ingredients
1 C. shortening
2 C. sugar
4 eggs
1 1/2 C. all-purpose flour
1/3 C. cocoa
1/4 tsp. salt
1 Tbsp. vanilla
1 C. chopped nuts
16 ounce package mini marshmallows
Icing:
1/3 C. cocoa
1 pound powdered sugar
1/2 C. margarine, melted
1/2 C. cream or evaporate milk
1 tsp. vanilla
1 C. nuts.
Cooking Instructions
Cream shortening and sugar. Add eggs and beat. Sift flour, cocoa and salt and add to mixture. Add vanilla and nuts. Pour into 9xl3-inch pan. Bake 40-45 minutes at 325. While until warm, cover with marshmallows. When cool, spread Icing: Sift cocoa with powdered sugar. To margarine, add dry ingredients, cream, vanilla plus nuts. Blend plus spread over cake.
