Raisin Cabbage Salad
Ingredients
4 C. cabbage, shredded
2 C. zucchini, shredded
1 C. scallions, chopped
1/2 C. raisins
4 cloves garlic, minced
1/4 tsp. salt
1/8 tsp. black pepper, freshly ground
2 Tbsp. cider vinegar
1 Tbsp. olive oil
1 tsp. olive oil
1 tsp. Dijon mustard
1/2 tsp. mustard seeds
1/2 tsp. celery seeds
1/2 tsp. sugar substitute equal to 1/2 tsp. sugar
1/8 tsp. red pepper flakes, dried
Cooking Instructions
In large serving bowl, combine cabbage, zucchini, scallions, raisins, garlic, salt, and black pepper. In small bowl, whisk together vinegar, oil, mustard, mustard seeds, celery seeds, sugar, and pepper flakes. Add to cabbage mixture toss to mix well. Refrigerate several hours before serving.
