Raisin Bars
Ingredients
1 C. raisins
1/2 C. unsweetened apple juice
1 C. whole wheat flour
1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
1 egg
2 Tbsp. vegetable oil
grated orange rind
Cooking Instructions
In a saucepan, combine raisins and apple juice. Bring to a boil cool. Meanwhile, mix flour, baking soda, baking powder, spices, egg, and vegetable oil together. Add raisin mixture and blend thoroughly. Spread mixture into a lightly oiled 8-inch square pan. Sprinkle on grated orange rind. Bake at 350 degrees F. for 30 to 40 minutes. Cool in pan on a wire rack. Cut into bars.
