Quail With Mushrooms
Ingredients
6 slices bacon
Salt and pepper
1 bunch green onions, chopped
2 Tbsp. prepared mustard
1 C. orange marmalade
6 quail, dressed
1/2 lb. mushroom caps
3 Tbsp. melted butter
1/2 tsp. dry ginger
Cooking Instructions
Wrap a slice of bacon around each quail and arrange in rolls in a large sheet of heavy aluminum foil. Season with salt and pepper. Saute mushroom caps and green onions in butter. Pour over all quail and seal with a double wrap. Bake at 325 degrees for 1 hour. Combine remaining ingredients. Serve with quail. 6 servings.
