Pork Fillet In Apricots
Ingredients
1 pound pork fillet (diced)
2 Tbsp. seasoned flour
2 ounce butter
14 ounce can of apricot halves, drained and juices retained
2 Tbsp. worcestershire sauce
2 Tbsp. demerara sugar
2 tsp. vinegar
2 tsp. lemon juice
8 Tbsp. water
8 ounce long grain rice
Cooking Instructions
Toss pork pieces in seasoned flour. Heat butter and fry pork until lightly browned. Cook rice in boiling salted water. Chop all but 3 apricot halves. Mix 8 Tbls. apricot juice and Worcestershire sauce, sugar, vinegar, lemon juice and water. Add any remaining flour to the pork and pour in the apricot sauce and chopped fruit. Bring to the boil stirring, Reduce heat, cover and simmer for about 15 minutes spoon pork and sauce onto serving dish and border the rice around the meat garnish with the remaining apricot halves.
