Pineapple Zucchini Cake
Ingredients
3 eggs
2 C. sugar
1 C. oil
2 tsp. vanilla
2 C. zucchini, peeled and grated
3 C. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 can crushed pineapple, drained
1/2 C. chopped nuts or raisins
Cooking Instructions
Cream eggs, sugar, oil and vanilla until light and fluffy. Fold in zucchini. Add flour, baking powder, baking soda and salt. Fold in pineapple and nuts or raisins. Pour into a greased and floured 9 x 13 inch pan. Bake 40 to 45 minutes in a 350 degree oven.
