Pineapple Chicken Stir Fry
Ingredients
1 lb. chicken breasts, boneless skinless, 1-inch cubed
8 oz. stir-fry vegetables
1 Tbsp. sesame oil
1 tsp. ginger
1 clove garlic, crushed
1 medium red pepper, cut into strips
8 oz. pineapple chunks, drained
2 Tbsp. soy sauce
2 Tbsp. corn starch
2 Tbsp. pineapple juice
Cooking Instructions
Stir fry the chicken and the veggies in the oil, and add the ginger and the garlic. Cook for 5 min. then add the pineapple and the soy sauce. Combine the cornstarch and the pineapple juice and add to the stir-fry, stir and cook for a few minutes until sauce thickens. Serve over hot cooked rice or noodles.
