Peach Cake
Ingredients
2 C. all purpose flour
3 tsp. baking powder
1/2 tsp. salt
1 egg, beaten
3/4 C. skim or 1 percent milk
1/4 C. vegetable oil
1/4 C. sugar
nonstick cooking spray
fresh or juice pack peaches
Cooking Instructions
Sift flour with baking powder and salt. Combine egg, milk, and oil in a large bowl. Add sugar. Stir in dry ingredients. Do not over mix. Place in loaf pan coated with vegetable spray. Bake at 375 degrees F. for 30 minutes. Top each slice with 1/3 C. peaches.
