Passover Apple Cake
Ingredients
9 egg whites
9 egg yolks
1/2 C. sugar
9 Tbsp. matzo meal
9 Tbsp. potato starch
1 lemon; juiced and rind
Grated apple mixture
6 apples grated
1/2 C. sugar
1 Tbsp. lemon juice
1 1/2 tsp. cinnamon
Cooking Instructions
In bowl, beat until stiff, 9 egg whites, set aside. In a bowl, beat until thick and light, 9 egg yolks and 1/2 C. sugar. Stir in 9 Tbls. matzo meal, 9 Tbls. potato starch and the juice and rind of 1 lemon. Fold in 9 egg whites. Pour 1/2 the batter into ungreased 9 inch x 13 inch baking pan. Bake at 325 for 25 minutes. Remove from oven and spread with apple mixture. In a bowl combine 6 apples, grated; 1/2 C. sugar; 1 Tbls. lemon juice and 1 1/2 tsp. cinnamon. Spread remaining batter over apples. Bake 20 to 25 minutes longer, until brown.
