Parmesan Perch
Ingredients
1 lb. ocean perch or lean fish fillets
2 Tbsp. dry bread crumbs
1 Tbsp. grated Parmesan cheese
1 tsp. dry basil leaves
1/2 tsp. paprika
Dash of pepper
1 Tbsp. reduced calorie margarine, melted
2 Tbsp. chopped fresh parsley
Cooking Instructions
Move oven rack to position slightly above middle of oven. Heat oven to 500 degrees. Spray rectangular pan, 9x13x2 inch, with non-stick cooking spray. If fish fillets are large, cut into 4 serving pieces. Mix remaining ingredients excluding margarine and parsley. Brush one side of fish with margarine, dip into crumb mixture. Place fish uncoated side down into pan. Bake uncovered about 10 minutes or until fish flakes with fork. Sprinkle with parsley. Makes 4 servings.
