Oatmeal Fruit Bar Cookies
Ingredients
1 C. quick cooking rolled oats
1 C. flour
1/2 tsp. salt
1/2 tsp. cinnamon
1 tsp. vanilla
artificial sweetener to equal 1/2 C. sugar
1/2 C. shortening
2 C. fruit, canned, drained, water packed (save juice)
2 Tbsp. reserved fruit juice
Cooking Instructions
Mix all ingredients, except fruit and juice, until mixture becomes coarse crumbs. Add the fruit juice to hold crumbs together. Press 1/2 of the crumbs into an 8 by 8 inch square pan. Top with chopped or mashed fruit. Pat on remaining crumbs. Bake at 375 degrees F. for 30 minutes. Cut bars when cool.
