Oatmeal Cake
Ingredients
1 C. quick oats
1-1/4 C. boiling water
1/2 shortening
1 C. brown sugar
1 C. granulated sugar
1-1/2 C. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
2 beaten eggs
1 tsp. vanilla
Topping
6 Tbsp. melted butter
6 Tbsp. cream or milk
10 Tbsp. brown sugar
1 C. shredded coconut
Cooking Instructions
Pour water over oats and let stand for 20 minutes. Cream shortening and sugars together; add oats and water mixture. Sift dry ingredients and add to the above mixture. Mix thoroughly. Add beaten eggs and vanilla last and mix well. Pour into greased and floured 9″ x 13″ x 2″ cake pan. Bake at 350 for 30 – 35 minutes. Topping: Mix together and spread on top of cake when it is cool. Put in oven under broiler to brown.
