Noodles With Sour Cream
Ingredients
8 oz. medium egg noodles
boiling salted water
4 Tbsp. butter, at room temperature
1/2 C. chopped scallions, including green part
1/4 C. finely minced green pepper
salt and pepper to taste
1/2 C. fresh or canned chicken broth
1 C. sour cream
1/4 C. freshly grated Parmesan cheese
Cooking Instructions
Cook noodles in boiling salted water until tender but not overcooked. Drain noodles and run hot water over them. Drain again. Melt butter in a heavy saucepan and add noodles, stirring gently with a plastic spatula until they are coated with better. Add the scallions, green pepper, salt, pepper, broth and sour cream. Stir gently. Just before serving, sprinkle with cheese. Serves 6.
