New England Apple Cake
Ingredients
5 to 6 New Hampshire apples (peeled, cored, and sliced)
5 Tbsp. sugar
2 tsp. cinnamon
3 C. unsifted flour
2-1/3 C. sugar
1/2 tsp. salt
4 unbeaten eggs
1 C. cooking oil or 1 C. applesauce
2 tsp. vanilla
1/3 C. orange juice or apple cider
1-1/2 tsp. baking soda
1-1/2 tsp. baking powder
Cooking Instructions
Mix 5 Tbls. sugar and cinnamon. Sprinkle over apples and set aside. Mix the flour, 2-1/3 C. sugar, salt, eggs, cooking oil (or applesauce), vanilla, and orange juice (or apple cider). Then add baking soda and baking powder. Add cinnamon and apples. Stir well and pour into greased bundt pan. Bake at 350 degrees for 1-1/2 hours.
