Mushrooms In Sour Cream
Ingredients
3 Tbsp. butter or margarine
1 C. chopped onion
1 1/4 lb. fresh mushrooms, sliced 1/4″ thick
1 tsp. salt
1 tsp. paprika
1/2 tsp. pepper
1/4 C. chopped parsley
1 C. dairy sour cream
Cooking Instructions
In hot butter in a medium skillet, Saute onion until golden, about 5 minutes. Add mushrooms and 1/2 C. water and simmer, covered (adding more water if necessary) until mushrooms are tender, about 15 minutes. Add salt, paprika, pepper, 2 Tbsp. parsley, and the sour cream. Heat very slowly, stirring, until thoroughly hot. Before serving, sprinkle with remaining parsley. Serves 6.
