Mulligatawny Soup
Ingredients
6 C. chicken broth
1 C. diced cooked chicken
1 yellow onion, chopped
1 apple, cored and chopped
1 green bell pepper, chopped
2 carrots, sliced
2 ribs celery, chopped
1 tsp. salt
2 to 4 tsp. curry powder
1/8 tsp. ground nutmeg
2 C. cooked white or brown rice
Cooking Instructions
Combine all the ingredients in a large saucepan. Cook, uncovered, over medium heat for 30 to 40 minutes, or until vegetables are tender. Serve hot or cold.
