Ingredients

nonstick vegetable spray
2 C. all purpose flour
1-1/2 tsp. baking powder
1/2 C. vegetable oil
1/4 C. water
1 egg
2 packages sugar substitute (not aspartame)
1 tsp. vanilla extract

Cooking Instructions

Preheat oven to 350 degrees F. Spray cookie sheet with nonstick vegetable spray. Combine all ingredients to form a soft dough. Roll or pat out onto floured board to thickness of 1/4 inch. Cut 2-inch rounds and place 1-inch apart on prepared cookie sheet. Bake for 15 to 20 minutes until edges are a light golden brown.
