Mixed Grill With Ginger Tomato Sauce
Ingredients
1/2 lb. boneless lamb (leg or loin)
1/2 lb. pork (tenderloin cubed)
2 sm. onions, sliced
2 green or red peppers (or 1 of each), cut into sq.
3 Tbsp. olive oil or salad oil
2 Tbsp. fresh lemon juice
1 clove garlic, mashed
1/2 tsp. salt
1/2 tsp. ground pepper
Ginger
Tomato barbecue sauce
(3/4 C. tomato catsup,
3 Tbsp. brown sugar,
2 Tbsp. soya sauce)
Cooking Instructions
Cut one cup of meat into 1 1/4 to 1 1/2 inch cubes. Alternate meats with slices of onion and cubes of red and green peppers on skewers. Mix oil, lemon juice, garlic, salt and pepper together. Pour over meat. Marinade 1 to 2 hours turning once or twice. Prepare ginger tomato barbecue sauce. Grill loaded skewers over hot coals, or under broiler for 6 to 8 minutes per side or until done to your liking. Brush with barbecue sauce. Serve immediately.
