Microwave Poached Fish Fillets
Ingredients
1 to 1 1/2 lbs. fish fillets
2 Tbsp. margarine
3 Tbsp. lemon juice or white wine
1/4 C. slivered almonds
Cooking Instructions
In glass dish microwave margarine and almonds on high for approximately 5 minutes (until light brown). Remove almonds and add lemon juice to margarine. Turn fillets over to coat. Cover dish with plastic wrap. Microwave 5 minutes on high. Uncover. Sprinkle almonds and Parmesan cheese over fish. Microwave 1 minute more.
