Microwave Apple Blueberry Crunch
Ingredients
4 lg. cooking apples, peeled & sliced (5 C.)
1/2 – 3/4 C. fresh or frozen blueberries (or cranberries)
1 (4 serving) pkg. regular butterscotch pudding mix
1/4 C. margarine or butter
2/3 C. rolled oats
1/2 C. flour
1/2 C. brown sugar
1/2 C. chopped pecans
1/4 tsp. cinnamon
1/4 tsp. nutmeg
Cooking Instructions
Place apples and berries in 8″ x 1 1/2″ round or 8″x8″ square microwave safe baking dish. Sprinkle with 2 tablespoons dry pudding mix; set aside. In medium microwave safe bowl melt margarine (about 30 to 45 seconds on high). Add remaining ingredients. Mix until crumbly. Spoon over fruit mixture (dish will be full). Microwave, uncovered, 100% power (high) 11 to 13 minutes, giving dish a quarter turn every 3 minutes. Let stand 30 minutes before serving. 6 to 8 servings.
