Magnificent Roll Cake
Ingredients
5 eggs
2/3 C. sugar
1/4 tsp. salt
1/2 C. sifted cake flour
3 Tbsp. melted butter
1 tsp. vanilla
1 C. jam, jelly or other filling
Cooking Instructions
Combine eggs and sugar and beat until blended. Place over hot water and heat until mixture is slightly hot (250). Remove from heat and beat until mixture holds a soft peak. Combine salt and flour and fold into egg mixture. Fold in butter, a Tbls. at a time. Blend in vanilla. Pour into a large (10 x 15 inch) pan lined with paper. Bake in moderate oven (350) 15 to 20 minutes. Turn quickly onto a towel sprinkled with confectioners’ sugar, remove paper and trim off crusts. Spread quickly with slightly whipped jam or jelly, or other filling, roll and cool; or roll cake while hot and when cold, unroll and spread with filling and roll. Just before serving sprinkle cake with confectioners’ sugar.
